Microwave: Creamy Chicken and Vegetables

This recipe adaptation was inspired by a recipe from @BudgetBytes. This a great recipe website. The author, Beth Moncel, writes in a fresh, clear, fun, informative style. Her recipes are always interesting and easy to make.
 
Also, I make miniature meals because as a single person, I don't need to make large meals. Plus, miniature meals reduces food waste.
 
As usual, I don't have all the ingredients. In this case, I was able to use several leftover items, so my measurements are a guess. Being frugal is a creative and adaptive process.


Microwave: Creamy Chicken and Vegetables


Ingredients:
 
1 Cup Leftover Cooked rice
1/3 Cup Canned Salsa
2-3 Heaping TBspns Canned Mixed vegetables
1/3 Cup Cooked Chicken, diced
1/2 - 1 Cup Chicken broth (or use broth made from Chicken bouillon and water)
1 TBspn Crushed Dry Thyme
A few grinds of Black pepper
Plain yogurt
2-3 TBspns Mozzarella Cheese, grated (or use more if you desire)
 
 
Process: 
 
In a medium bowl, add ingredients, except the yogurt and cheese.
Stir and mix thoroughly.
 
Because, at the moment, I only wanted to taste the end result, I scooped out about 3 TBspns of the mixture and placed them into a dessert bowl.
 
Then, I microwaved it for 1 minute on high until hot.
 
After removing the bowl, I stirred in 1-2 ounces of plain yogurt and added cheese on top.
 
Then, I microwaved the mixture, again, for about 30 seconds to melt the cheese.
 
 
While it may not be clear, I made a larger batch than a dessert bowl and only microwaved a portion to make a miniature meal.

I can't say enough about the herb Thyme, I should use it more, it really makes this dish heavenly.

Microwave: Spicy, Cheesy Popcorn

Microwave: Spicy, Cheesy Popcorn

Pre-preparation:
Make popcorn*. Store in a container with a lid.
 
*See post DIY Microwave Popcorn Maker for more information.
 


Ingredients:

4 TBspns Olive oil, spray if possible
1 Tspn Garlic powder
Ground black pepper, to taste
1 Tspn Onion flakes
1 Tspn Cumin
1 Tspn Paprika
2 Drops Hot sauce
Parmesan cheese
Cheese, shredded or grated

Note: if you want the mixture spicer, increase the amount of hot sauce, cumin, and paprika.
 

Process:

  • With popcorn in a container with a lid, spray popcorn with vegetable oil. (See DIY Oil Sprayer, below.)
  • Add garlic powder, ground black pepper, onion flakes, cumin, paprika, hot sauce, parmesan cheese, grated cheese and salt.
  • Cover container.
  • Shake container to spread the spices throughout the popcorn.

Note: I had to remove some of the popcorn to make it fit into the container.


DIY Oil Sprayer:
Use a bottle with a sprayer.
Add vegetable oil.
 
 
Alternative Process:
 
In a small, microwaveable, glass container, add oil, garlic and onion powders, cumin, paprika, hot sauce and salt.
Stir and mix ingredients together.
Microwave on high for about 10 seconds.
Remove container.
Stir and mix ingredients.
Spoon mixture over popcorn.
Sprinkle popcorn with parmesan and grated cheese.
Cover container.
Shake container to spread spices throughout popcorn.

DIY MIcrowave Popcorn Maker

My previous microwave popcorn "maker", a casserole dish broke. So, I had been using a cracker cardboard box to make microwave popcorn but after many uses, it bit the dust.
 
So, I checked my cardboard box stash and found another box that might work as a DIY Microwave Popcorn Maker.
 
 
I got another thin piece of cardboard and cut a piece to put inside the box on the bottom.
 
To make popcorn with your DIY Microwave Popcorn Maker*:

  • In a cup, add about 1/4 cup of kernels.
  • Add water to cover the kernels.
  • Wait about 5 minutes to let the kernels soak up some water.
  • Drain the water off the kernels.
  • Add kernels to your DIY Microwave Popcorn Maker.
  • Close box lid.
  • Microwave on high for 3-4 minutes.
  • Wait until the popping begins to stop, where you hear only 1-3 pops. Be careful the box will be hot, the contents will be hot.
  • Add popcorn to a container with a lid.
 

Basically, you add prepped popcorn to the box and microwave on high for 3-4 minutes.
 
 
Most of the time, using the prepped kernels reduces the number of unpopped kernels.

DIY: Hasty Pickle Relish

I needed to use the remaining pickles from an aging batch of DIY Quick Pickles. I thought using them in a pickle relish would work.

When I searched for a pickle relish recipe, I was surprised. Most recipes were for sweet pickle relishes and the quantities were huge because the idea was to can the relish.

But, the relish I had in mind was different, was it a dill pickle relish? Search results were similar.

So, I read a few recipes. Most of the recipes included bell peppers, celery seed, mustard seed, dill seed, turmeric, vinegar, sugar, and salt. Plus, most recipes wanted the cucumbers and bell peppers ground up in a blender.

Well, this wasn't going to happen, so I was left to improvise.

Using a recent Cucumber Relish recipe as a guide, I added and deleted a few ingredients.

I choose not to add the vinegar, lots sugar or salt because I was using pickles. Plus, I did not have celery seed, mustard seed, or dill seed. I had Turmeric, but hesitated using it. Maybe another time.
 
 
DIY: Hasty Pickle Relish

Ingredients:

8 DIY Quick Pickle Spears, sliced and diced
2 TBspns Bell pepper, sliced and diced
2-4 Grinds Black pepper
8 Shakes Onion flakes
1/2 Tspn Sugar
 

Process:

In a medium container with a lid, add the pickles and bell pepper.
Add black pepper, onion flakes, and sugar.
Stir thoroughly to mix ingredients.

I had to test this relish, so I added a few spoonfuls to half a ham and cheese tarta (sandwich). It turned out great!

WW Cucumber Relish

Ingredients:
 
1/2 Cumber, peeled, deseeded, sliced and diced
2 TBspns Bell pepper, sliced and diced
4 Tspns can salsa, drained
6 Shakes Onion Flakes
1-2 Drops Hot sauce
1 Tspn Oregano powder
1/4 Cup Yogurt, plain
 
 
Process:
 
In a medium container with a cover, add cucumber
ber and bell pepper.
Add salsa, onion flakes, hot sauces, oregano and yogurt.
Stir thoroughly to mix ingredients.
Cover and refrigerate until needed.

Skillet: Chicken and Vegetable Hash (Toast Topping)

I had a bell pepper I had to use before it went bad. I did not want to do the usual dice it up and freeze it. So, I hunted down a few recipes where I could use fresh diced bell pepper.

This one is great for using vegetable and chicken leftovers.

 


Ingredients:

Vegetable oil
1/2 Tspn Onion flakes
1/2 Tspn Garlic powder
1-3 Drops Hot sauce
2 Grinds Black pepper
1/4 Bell pepper, diced or 1/2 Cup Frozen mixed vegetable, drained, rinsed, cooked
1/4 Cup Canned Mushrooms, drained, rinsed, sliced
1/4 Cup Potato, cooked, diced (Optional)
1/4 Cup Chicken, cooked, diced

Optional sauce:
2 TBspns BBQ sauce
2 TBspns Milk
Add ingredients to a separate bowl. Mix well and set aside.
 

Process:

Add oil to skillet.
Add onion, garlic, hot sauce, black pepper.
Stir and mix.
Sauté for 2-3 minutes.
Add bell pepper and mushrooms.
Stir ingredients thoroughly.
Sauté for another 2-3 minutes.
Reduce heat to medium.
Add potatoes. (Optional)
Add vegetables. (Optional)
Add chicken.
Mix ingredients.
Cook on medium-high until cooked and warmed throughout.
Stir frequently.
 
Optional sauce: add 1 TBspn of BBQ sauce into mixture or as a topping.

Variation: Serve as a Toast Topping.
Spread 1 Tspn mayo over toast.
Add some hash to top of toast.
Option: Top with 1 Tspn if BBQ sauce.

For me, the “heat” factor was high.

Microwave: Mug O'Peanut Omelet -- An Introduction to George Washington Carver

From tragic beginnings, George Washington Carver became a noted botanist who promoted various agricultural methods and new cash crops like the peanut and sweet potato that helped save the American agricultural economy in the 1930s.
 
This is the first of several peanut recipes, I will attempt to adapt based on Carver's recipes published by Experimental Station, Tuskegee Normal and Industrial Institute, Tuskegee Institute, Alabama, Tuskegee Institute Press in BULLETIN NO. 31 June 1925 (Revised from the original publication of April, 1918).
 
 
Original Recipe
"NO. 44, PEANUT OMELET
Cream a slice of bread in half a cup of rich milk; beat the whites and yolks of two eggs separately; add the yolks to the bread crumbs and milk; to half a cup of finely ground peanuts add a dash of pepper and salt; mix thoroughly; fold in the whites, and cook as usual in a buttered pan."

My Version is below.

Mug O’Peanut Omelet (Bread Pudding)
(Adapted from: How to Grow the Peanut and 105 Ways of Preparing it for Human Consumption Seventh Edition, January 1940, By George W. Carver, M.S. in AGR., Director, No. 44, Peanut Omelet)
 

 
Ingredients:

Olive oil
2-3 Drops Hot sauce
Ground Black pepper to taste
A Dollop Milk
1 Egg
1 Slice Bread, multigrain, torn into pieces
1 TBspn Crunchy Peanut Butter or Smooth Peanut Butter
1/2 Tspn Crushed peanuts (Optional)
 

Process:

Add oil to mug, swirl to coat bottom and sides of mug.
Add hot sauce and milk.
Add black pepper.
Add egg.
Stir and whip thoroughly.
Add bread pieces.
Stir and mix to make sure bread is soaked in liquid.
Add peanut butter.
Add crushed peanuts (optional).
Stir and mix thoroughly.
Cover and Microwave on high for 2 minutes.
 

Came out pretty good. For me, because it was a bit sweet, I think of it as a dessert.

Microwave: Mug O'Frittata

Over time, I shifted from making a Mug dish and eating it straight from the mug to using the recipe as a Toast Topping. Now, I am using various recipes as a Quesadilla filling.
 
Also, over time, I have moved away from frying foods. Plus, I hardly every use salt in my recipes because often many of the ingredients already contain salt.
 
I do attempt to make my recipes GERD-friendly. This can not be labelled GERD-friendly primarily because it contains cheeses.
 
 
Mug O’Frittata 


Ingredients:

1 Slice Multigrain toast or “fried” Tortilla*
1 Dab of Olive oil
1 Egg
1 Dollop of Milk (lactose-free)
1-2 Drops Hot sauce
1 Tspn Parsley, dry
S/P to taste
1-2 TBspns Hard or mixed cheeses, grated
1 Slice of Turkey lunchmeat, torn into pieces
2 Heaping TBspns Canned mixed vegetable, drained & rinsed, or frozen mixed vegetables
Mayo (Optional)
Topping: 1 TBspn Canned Mushroom slices / bits, rinsed (Optional)
Garnish: parmesan cheese (Optional)
 

Process:

Add oil to mug, swirl to cover bottom and sides.
Add egg, milk, spices and S/P.
Stir and whip thoroughly.
Add cheese, vegetables and turkey pieces.
Stir and mix well.
Top with mushrooms.
Microwave on high 2 minutes.
Check to make sure all liquids have been cooked off, if not microwave 60secs or more.
Remove and garnish with Parmesan cheese.
Spread some mayo over toast or "fried" quesadilla.
Mash and spread the mixture over toast, or a tortilla and fold (It will be stuffed).




 
 
I did not use the mushrooms, Parmesan cheese, or put mayo on the "fried" quesadilla and it was fabulous and filling.


*Note: I microwaved the tortilla for about 60sec on high to "fry" it. A microwaved tortilla is not as good as a fried tortilla but I am just not frying much these days.
 
To fry a tortilla, put a bit of oil in a skillet and brown the tortilla on both sides and then while still in the skillet fill one side of the tortilla, fold over and cook a bit more. Then remove from skillet to plate.

Ingredients:

A Dab Vegetable oil
1 Egg
6 Tspns LO Cooked rice
1-3 Drops Hot sauce
2 Tspns Mozzarella cheese, shredded
Ground Black pepper, to taste
1 TBspn LO Canned salsa
1 TBspn LO Canned corn, drained and rinsed
A dollop of Milk
A dribble of Lime juice

 
Process:

Use a dab of oil to coat bottom and sides of mug.
Add remaining ingredients to the mug.
Whip and stir mixture thoroughly.
Microwave on high for 2 minutes.
Remove.
With a fork, check bottom of mug to make sure there is no uncooked liquid left. If so, microwave 30 seconds or more until all liquid has cooked.

Eat straight from the mug or use mixture to make a Toast Topping.

Microwave: Mug O'Chilaquiles

Good Morning!

Chilaquiles is a delicious Mexican dish.

Plus, you can use your leftover stale corn tortillas.

It's been a long time since I made a recipe that was perfect the first time around and often when I make the recipe again, it just never tastes as good as the first one.

My eye jumps to Mug recipes that scroll by on YouTube or Twitter, so I was thrilled to see a mug recipe for Chilaquiles.

As usual, I did not have all the ingredients the recipe called for, like sour cream, so I made my own.

 

Microwave: Mug O'Chilaquiles (Toast Topping)

Pre-preparation:

Ingredients:

Leftover corn tortillas
Cream
Apple cider vinegar
1 slice of multi-grain bread

 

DIY Tortilla Chips

Use leftover corn tortillas.Spread tortillas over on a microwaveable plate.
Microwave on high 2 minutes.
Remove.
Turn tortillas over.
Return plate to microwave.
Microwave on high 1-2 minutes.
Remove.
When tortillas have cooled, break them into small pieces.
Save unused tortilla chips and pieces in a closed container.


DIY Sour Cream

In a refrigerator container with a lid, add 3 TBspns of cream.
Add 1 TBspn of apple cider vinegar to cream.
Stir cream and vinegar together.
Cover and store in frig for 10-30 minutes.

Make toast.




Ingredients:

 
1 egg
2 TBspns milk
Ground black pepper
3 Drops hot sauce
3 TBspns mozzarella or monetary jack cheese, shredded
1 Tspn Dry onion flakes
Handful of DIY tortilla chips, broken into small pieces.
3 TBspns canned salsa, drained
Toppings: Mayo, DIY Sour cream, Dry parsley or cilantro (optional)



Process:

 
In a microwave-safe mug:
Add egg.
Add milk.
Add black pepper.
Add hot sauce
Whip together with a fork.

Add cheese and onion flakes to the egg mixture.
Stir.

Add tortilla chips and salsa.
Stir.

Microwave on high for about 2 minutes, or until cooked through.

Spread mayo over toast.

Add egg mixture to top of toast and spread over surface of toast.

Garnish with about 2 TBspns of sour cream, and sprinkle with parsley or cilantro.

It's Been a Week of Salvage Operations

This week, I attempted to salvage lettuce, sardine fishballs, and some papaya and pumpkin fruit.

On Saturday, I made two fishball recipes. Both were a flops. I had over 60 fishballs to salvage.



With some DIY Tartar sauce or a red sauce, they worked as appetizers.

Then, I got a craving for Tostadas. That required lettuce. So, I have been eating a lot of Tostadas this week to save the lettuce and fishballs.

On a store-bought tostada chip, I added a base of refried beans, a crumbled fish ball on top of a base, with a little red sauce or DIY Tartar sauce, shredded lettuce and parm cheese.

The red sauce and DIY Tartar sauce helped add flavor.

There was not much difference in taste between the two types of fish balls. Plus, there’s not much difference in the pictures, either. I am too embarrassed to show the assembly of ingredients.

I can not afford to throw out these fish balls, so I will continue to look for ways to salvage them.



While I enjoyed these fishball Tostadas, another savage operation was a great success. Chicken Soup with pasta and a crumbled fishball.

The base of the soup was made from a previous Chicken broth recipe. The pasta was precooked and flavored with olive oil and basil. I just added the pasta and crumbled fishball to the broth. The fishball was like a dumpling.

Then, I thought about that bit of papaya fruit and pumpkn puree I had in the freezer.

Let's see if I add some plain yogurt, could I make mousses? Yes, I can.


Over the last five days, I saved 60+ sardine fishballs (some are frozen, will see how they work after thawing), a 1/2 head of lettuce and some frozen fruits.

Hotplate: 10+ Hours Pinto Bean Soup

Hotplate: 10+ Hours Pinto Bean Soup

Pre-Preparation:

Add 1 Cup of pinto beans, rinsed and drained into a medium pot.
Cover with water an inch higher than the beans.
Cover pot.
Leave on counter overnight.
If possible, check in a few hours to see if the beans need more water.


Ingredients:

1 Chicken bouillon cube
4 Cups water
A drizzle of vegetable oil
2 slices canned meat, cubed
5 dashes onion powder
5 dashes garlic powder
2 dashes hot sauce
1 TBspn Cilantro, dry (optional)
3 Grinds Black pepper
S/P to taste
Garnishes: shredded cheese, diced onions or scallions


Process:

In the morning, drain and rinse beans in a colander.
Set aside.
Add 1 chicken bouillon cube to 2 cups of water.
Microwave on high for 2 minutes.
Remove and stir to dissolve bouillon.
Set aside.
Add a dribble of veg oil to pot.
Add meat cubes to pot.
Add garlic and onion powders, hot sauce and black pepper.
Cook on medium-high, scald the meat quickly, then add 1/2 cup chicken stock.
Stir mixture.
Reduce heat to medium-low.
Cook for a few minutes.
Add beans to a pot.
Add remaining stock.
Stir.
Add 2 Cups Water.
Stir.
Bring to a boil.
Reduce to a simmer.
Stir.
Add cover but leave a small gap to let air circulate. It will help the beans soften.
Simmer 45 minutes.
Check mixture.
Stir.
Add more water if liquid is low.
Add salt to taste.
Stir.
Simmer for another 45 minutes.


 When serving, add garnishes of choice.

Lentils, Mixed Vegetables and Black Bean Salsa

I am always on the lookout for a lentil recipe that works for me.

This one turned out pretty good. It's probably not as crunchy as the original recipe because I used mostly canned goods.




Lentils, Mixed Vegetables and Black Bean Salsa

First, I made a batch of lentils using my recipe: Stovetop: Lentils with Garlic Powder (https://riastoneblog.blogspot.com/2019/06/stove-top-lentils-with-garlic-powder.html).

Then, with each of the items below, drain, rinse, drain again in a sieve. Then dump into a large food container with a lid.


Note: the ounces measurements are approximate.

I used: Metric-Conversions.org (https://www.metric-conversions.org/weight/grams-to-ounces.htm).

1 560g (20oz) Can Black Beans
1 400g (14oz) Can Mixed vegetables
1 210g (8oz) Can of salsa

Next, add to the ingredients:

1 Juice from a slice of lime
Ground black pepper, to taste
1 Cup cooked lentils, drained in a sieve
Stir the ingredients to mix thoroughly.

Cover container.
Place in frig.
Chill for a couple of hours.




This is a hearty, meaty tasting salsa.

Microwave: Mug O'Apple Bread Pudding

During the COVID19 quarantine, I am rummaging around in closets, drawers, cupboards, and the frig.

I had a tablespoon of canned apple pie filling in the frig that had been sitting around for quite awhile.

I usually have a heel of bread somewhere in the frig.
So, I decided to make a Mug O’Apple Pudding based on a prior Mug O'Bread pudding recipe.
All I did different this time was stir the mixture well before microwaving.


Microwave: Mug O'Apple Bread Pudding Recipe

Ingredients:

1 8oz coffee cup
1 TB Canned apple pie filling
1 Slice of bread, torn into pieces
1 egg
1 1-2 TB sugar
2 TB milk or yogurt (I used lactose-free dry milk mix)
1 TB vegetable oil (or margarine)
1 tsp vanilla
2 Dashes of cinnamon


Process:

Add apple filling to bottom of cup
Break bread into pieces, place in cup.
In separate bowl, mix rest of ingredients
Pour mixture over bread.
Push bread down into cup so all pieces are soaked in mixture.
Stir and mix bread, fruit and egg mixture together.

Microwave 2 minutes on high.
Remove, let it cool for a bit before eating.




It tastes like apple crumb cake!
 
Variations: use other types of fruit or no fruit.
